Peanut Butter Protein Bars with Flaxseed


My new favorite treat.  Hands down.  I've been on the hunt for a tasty homemade treat that would help kick my cravings for straight sugar to the curb.  This is it.  While there still is a little bit of sugar, this is a BIG improvement from the type of cookies I'm usually making.

Peanut Butter Protein Bars
  • 1/2 cup peanut butter
  • 1/4 cup brown sugar (or sugar substitute) 
  • 2 tablespoons coconut oil, melted
  • 1 egg
  • 1/2 teaspoon baking soda
  • 2 tablespoons ground flaxseed meal
  • 3/4 cup quick oats
  • 1/2 cup whole wheat flour 
  • 1/4 cup dark chocolate chips (optional)
Preheat oven to 350 degrees.  Mix the first three ingredients together, be sure to soften your coconut oil.  Mix in the egg, baking soda, flaxseed, oats and flour.  Add chocolate chips (if you so desire).

Place on baking sheet - this recipe made about 18 bars.

Cook for 8-10 minutes.  Please note, these don't set as fast as the regular cookie, give them a minute to cool down.
