Blueberry Orange Zest Oat Muffins


Blueberry Orange Zest Oat Muffins


  • 1 cup all-purpose flour
  • 1 cup rolled oats, plus more for sprinkling
  • 1/2 cup brown sugar, packed
  • 1/2 tsp of cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup blueberry yogurt, or any other yogurt you have on hand
  • 1 large egg, beaten
  • 1/2 tsp vanilla extract
  • 1 cup blueberries
  • Zest of 1 orange
  • Sugar for the top

Preheat oven to 400 degrees.  Put dry ingredients in a bowl and set aside.  Gather the rest of the ingredients in a separate bowl, leaving aside the blueberries and orange zest.  Combine the two bowls and stir in blueberries and orange zest.  Optional: sprinkle the tops with sugar and oats.  Scoop into cupcake tins and bake for 13-15 minutes.  This recipe yields 12 muffins.

our little staycation.

 A few weeks ago we were sitting outside one of our favorite burger joints tossing around some ideas for this summer. TT and I had been wanting to go on a mini babymoon before we our little family expands here in a little over a month.  We landed on the St. Regis at Deer Valley - made possible by a fabulous locals rate!  We knew we could count on Richie and Jane, and they're always the best company (you must check out the video of our weekend here filmed and directed by Simply Jane)!  Here are a few snapshots from out weekend in Deer Valley and main street Park City.  It was so nice to relax at the pool and do nothing but read mindless magazines for a few hours and watch TT swim the whole time.  Oh yes, and not to be forgotten are the best pancakes I've ever had happened right here on this trip, crispy on the outside and fresh blueberries on the inside!!  Thanks for such a great weekend TT.

strawberry trifles for dessert and a bbq

last night we had a bbq in our very own backyard!  tt has been working so hard to get new sod, and redo our deck in time for us to enjoy it this summer.  success! i came home from work yesterday to a freshly painted deck with a bbq just waiting to be put to good use.  i decided to put myself to good use and make this trifle i've been craving ever since Alison of TheAlisonShow posted it on her blog.  i was so surprised at how simple and how few ingredients it called for!  and it helps that strawberries are so delicious and sweet and on their own right now.
 tt grilling up some very tasty burgers.

jane brought the most delicious (and light!) pasta salad.  
burgers. fries. GOOD watermelon. diet coke. all the fixings of a good bbq.

and in true fashion - please note the giant bowl of fry sauce in the middle of the table.  i might add it was gone by the time dinner was finished!
